Ipswich has some of the best coffee spots in the state, and caffeine lovers will be delighted to hear that leading Queensland bean business Stellarossa Coffee is coming to the city.
Nicholas Street Precinct will welcome the region’s first Stellarossa café in 2022.
Fitout will begin in the coming weeks with the official opening set for early December.
Ipswich Central Redevelopment Committee Chairperson Councillor Marnie Doyle said it was exciting another high-quality cafe and coffee brand was coming to the city.
“There is something about Ipswich people and their caffeine – they know a good cup of coffee and we are very fortunate we have some very good places here already, with another big name joining them,” Cr Doyle said.
“Stellarossa Coffee began in Brisbane in 2009, since then they have grown throughout Queensland,” Cr Doyle said.
“It makes sense that Stellarossa would come to the booming, coffee-friendly city of Ipswich and set up shop in our newly redeveloped Nicholas Street Precinct.
“Another big brand of this pedigree wanting to invest in Ipswich Central is an enormous show of confidence in the Ipswich market.
“This is fantastic news for ratepayers and local businesses in Ipswich Central and the wider Ipswich region.
“More announcements are imminent and we are excited about the variation and quality on offer for the Ipswich community.”
Stellarossa currently has 18 cafes and four drive-through cafes in Queensland.
Ipswich will be the 19th dine-in cafe, located on the mall with indoor and outdoor seating.
All Stellarossa cafes have menus specially designed to suit their local market.
The Stellarossa Nicholas Street franchise partners, Rony and Yasmin Hassan, are locals to the region and they are very excited to be a part of the positive change in the area.
Stellarossa’s partner roaster is based in Brisbane and uses ethically sourced coffee beans.
The specialty grade coffee is made in-stores by highly trained baristas passionate about serving perfect coffee.
The Nicholas Street Precinct redevelopment is a once-in-a-generation project which has included the opening of Tulmur Place civic plaza in November 2020, a new Ipswich Central Library in December 2020 as well as the delivery of a new council administration building and Australia’s first stand-alone dedicated children’s library in June 2021.
It also includes the restoration of The Commonwealth Hotel (formerly known as Murphy’s Hotel) and delivery of a new dining hub and retail spaces.

Darren Schultz, Stellarossa’s co-founder and Managing Director, said it was exciting to be opening in the Nicholas Street Precinct and there would be a focus on great food, relaxed surroundings, friendly smiles and, most importantly, perfect coffee.
“This location is right down our alley as Stellarossa is all about the locals. To have the opportunity to be a part of this development that is bringing Ipswich locals together and rejuvenating the heart of the city they love so much, is very special for us,” Mr Schultz said.
“We will be looking to hire a team of 10 to 15 locals with a wide range of skill sets from baristas to chefs, and guest experience specialists.
“They will be the soul of our cafe because ultimately, providing what we call The Stellarossa Experience is what we aim for in every interaction.
“Our cafe design has something for everyone, with a coffee window for grab-and-go guests, some cosy spaces inside for meetings or coffee catch-ups, and open spaces outside if our guests want to be a part of the mall’s hustle and bustle.
