A dozen food trucks will be serving up a feast this Saturday for the Future Flavour Food Fair, which will celebrate the ongoing transformation of the Nicholas St Precinct.
Karalee residents and food truck owners, Marco and Iris Bolanos, have been running the Iced Tea Co. for the past three years and say they’re thrilled to be part of the community event.
“You can see how much Ipswich needs it,” Mr Bolanos said.
“People really love being part of these events, they have a great atmosphere and they really bring the community together.
“I hope that it’s a sign of the energy Nicholas St will have in the future as a real hub of activity.”
Regulars at Springfield markets and Ripley markets, the iced tea aficionados will be serving up their signature flavour brews this Saturday, including the popular lychee and rose and their sugar-free iced teas.
“We do something a bit different from your typical iced tea flavours, and people are really happily surprised when they try flavours like our pink grapefruit iced tea,” Mr Bolanos said.
“My wife is responsible for our flavours, she’s really good at creating the perfect mix.”
Mr Bolanos said he had no regrets about giving up his full time job as an engineer last year to focus on growing his business.
“We finally got the money, time and opportunity to make it happen,” Mr Bolanos said.
“We really loved what we were doing, meeting people at markets and events, and we wanted to keep doing it.”

- Sliders and Fries
- O’Crumbs
- Poffertjes King
- Squidleys Calamari
- The Frying Piggy
Several Nicholas St shops will also be open for trading throughout the event from 4 – 8pm, including Trottie Becke, Fashion Connections, Ulli’s New Age Rocks, MLR Training, Ipswich City Mall Newsagents and Dominique’s French Bakery.
There will also be kids’ activities and entertainment by local bands including Wild Eyed Wonder, Paulina Schuemann and Jarrad Wrigley.
